German Potato Salad


In large sauté pan cook bacon until crisp

Remove from heat and reserve.

Toss red potatoes in bacon fat roast until tender

Toss sweet potato in olive oil, roast until tender

Pour left over oil and bacon fat from potatoes back in sauté pan

Sauté onion until caramelized

Deglaze with vinegar

Add sugar and potatoes to pan

Toss in bowl it serving platter

Top with bacon and parsley.


2 T olive oil
4 bacon slices, diced
1 cup sweet potato, peeled diced
2 cups red skin potatoes quartered
1 sweet onion sliced
1/4 cup apple cider vinegar
3 T brown sugar
1/4 cup chopped flat leaf parsley
Salt and pepper to taste
