Pimento Cheese

This versatile Southern classic can be served as a dip, on top of fried green tomatoes, or even on a sandwich!

Pimento Cheese:

8 oz cream cheese

2 c. grated cheddar cheese

½ c. diced pimiento

½ c mayonnaise

½ lemon

1 pinch cayenne pepper

Fresh flat-leaf parsley sprigs

Salt and pepper to taste

Use an electric mixer to beat the cream cheese in a medium bowl until light and fluffy. Add the cheddar, pimiento, mayonnaise, and lemon juice and salt and pepper. Mix on low speed until just combined. Season with cayenne. Top with sprigs of parsley if serving as a spread or dip.
