Tri-Colored Potato Salad


Tri colored potato salad

 

Ingredients:

 

1 lb purple potato, large dice

1 lb sweet potato, large dice

1 lb red potato, large dice

1/2 red onion minced

3 stalks celery diced

1 cup mayo

4 tablespoon Dijon

1 cup sour cream

5 pieces bacon cooked chopped

2 brunch scallion sliced

Splash apple cider vinegar

1 tablespoon brown sugar

Pepper

Directions:

Toss all ingredients together then serve warm or chill and serve.
