Makes 1½ cups
Ingredients
- 1 cup chopped walnuts
- ¾ cup pure maple syrup
- ¼ cup brown sugar
- 2 tbsp water
- 1 tbsp unsalted butter
- ½ tsp vanilla extract
- Pinch of salt
Instructions
- Combine maple syrup, brown sugar, water, and butter in a small saucepan over medium heat.
- Bring to a gentle simmer and cook for 3–4 minutes, stirring occasionally.
- Add walnuts and simmer for another 3–5 minutes, until the syrup slightly thickens.
- Remove from heat and stir in vanilla and salt.
- Let cool slightly before serving. The mixture will continue to thicken as it cools.
Storage: Refrigerate in an airtight container for up to 2 weeks. Serve warm or at room temperature.
This is very much the classic ice-cream-parlor style of wet walnuts: walnuts suspended in a maple syrup rather than cooked until dry/candied.
