Curried Pumpkin Bisque


Ingredients (makes 4–6 servings):

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp curry powder
  • 3 cups pumpkin purée
  • 3 cups broth
  • ½ cup Chef Paul’s Peach Preserves
  • ½ cup coconut milk or cream
  • pumpkin seeds

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion and garlic until soft, about 3–4 minutes.
  3. Stir in curry powder and cook 1 minute until fragrant.
  4. Add pumpkin purée, broth, and Chef Paul’s Peach Preserves. Stir well.
  5. Simmer 10–12 minutes, then blend until smooth using an immersion blender (or carefully in batches in a regular blender).
  6. Stir in coconut milk or cream. Season with salt and pepper.
  7. Simmer 2–3 more minutes. Garnish with pumpkin seeds or fresh herbs before serving.
