Ingredients (makes 4–6 servings):
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp curry powder
- 3 cups pumpkin purée
- 3 cups broth
- ½ cup Chef Paul’s Peach Preserves
- ½ cup coconut milk or cream
- pumpkin seeds
Instructions:
- Heat olive oil in a large pot over medium heat.
- Sauté onion and garlic until soft, about 3–4 minutes.
- Stir in curry powder and cook 1 minute until fragrant.
- Add pumpkin purée, broth, and Chef Paul’s Peach Preserves. Stir well.
- Simmer 10–12 minutes, then blend until smooth using an immersion blender (or carefully in batches in a regular blender).
- Stir in coconut milk or cream. Season with salt and pepper.
- Simmer 2–3 more minutes. Garnish with pumpkin seeds or fresh herbs before serving.
