Maple Wet Nuts


Makes 1½ cups

Ingredients

  • 1 cup chopped walnuts
  • ¾ cup pure maple syrup
  • ¼ cup brown sugar
  • 2 tbsp water
  • 1 tbsp unsalted butter
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions

  1. Combine maple syrup, brown sugar, water, and butter in a small saucepan over medium heat.
  2. Bring to a gentle simmer and cook for 3–4 minutes, stirring occasionally.
  3. Add walnuts and simmer for another 3–5 minutes, until the syrup slightly thickens.
  4. Remove from heat and stir in vanilla and salt.
  5. Let cool slightly before serving. The mixture will continue to thicken as it cools.

Storage: Refrigerate in an airtight container for up to 2 weeks. Serve warm or at room temperature.

This is very much the classic ice-cream-parlor style of wet walnuts: walnuts suspended in a maple syrup rather than cooked until dry/candied.
