Mexican Street Corn

This easy-to-make, Mexican Street Corn is a delicious and simple way to dress up your farmer’s market corn!

Mexican Street Corn

6 ears fresh corn in husk
6 T mayonnaise
6 T softened butter
1 block cotija cheese or grated Parmesan
1 T smoked paprika or chili powder
1 lime cut into 8ths
S&P tt

Roast corn in the husk oven until kernels are soft to touch
Shuck corn and leave husk attached for a handle
Mix mayo and butter together
Add mixture to corn
Crumble cheese over corn
Sprinkle spice tt
Finish with lime
