Makes 6–8 servings
Ingredients
- 2 pork tenderloins
- 1 teaspoon salt
- ½ teaspoon pepper
- ¼ cup yellow onion, thinly sliced
- 1 teaspoon fresh rosemary, minced
- ⅓ cup brown sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 3 peaches, peeled and diced
- 1 apple, peeled and diced
Instructions
- Preheat the oven to 400°F.
- Season the pork tenderloins with salt and pepper, then place them in a baking dish.
- In a bowl, combine the onion, rosemary, brown sugar, apple cider vinegar, Dijon mustard, peaches and apple.
- Spoon the peach-apple mixture over the pork tenderloins.
- Roast for 25–30 minutes, or until the pork reaches an internal temperature of 145°F.
- Let rest for 5–10 minutes before slicing.
- Spoon the pan juices and fruit glaze over the sliced pork before serving.
