Makes 1–2 dozen cookies
Ingredients
- 2 sticks unsalted butter
- 4 apples, approximately 8 ounces each, peeled and grated
- 1½ cups granulated sugar
- 2 teaspoons vanilla extract
- 1⅔ cups all-purpose flour
- 1 teaspoon baking soda
- 2 cups rolled oats
- 2 teaspoons cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon allspice
- ¼ teaspoon cardamom
- ½ teaspoon kosher salt
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, beat together the butter, sugar, vanilla and apples.
- Add the flour, baking soda, rolled oats, cinnamon, nutmeg, allspice, cardamom and kosher salt.
- Mix until combined.
- Drop spoonfuls of dough onto the baking sheet.
- Bake for 12–15 minutes, until lightly golden around the edges.
- Let cool on the pan for a few minutes before transferring to a wire rack.
If the dough seems too wet, add a little extra flour, up to ½ cup.
