Apple & Peach Glazed Pork Tenderloin


Makes 6–8 servings

Ingredients

  • 2 pork tenderloins
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup yellow onion, thinly sliced
  • 1 teaspoon fresh rosemary, minced
  • ⅓ cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 3 peaches, peeled and diced
  • 1 apple, peeled and diced

Instructions

  1. Preheat the oven to 400°F.
  2. Season the pork tenderloins with salt and pepper, then place them in a baking dish.
  3. In a bowl, combine the onion, rosemary, brown sugar, apple cider vinegar, Dijon mustard, peaches and apple.
  4. Spoon the peach-apple mixture over the pork tenderloins.
  5. Roast for 25–30 minutes, or until the pork reaches an internal temperature of 145°F.
  6. Let rest for 5–10 minutes before slicing.
  7. Spoon the pan juices and fruit glaze over the sliced pork before serving.
