Apple Cookies


Makes 1–2 dozen cookies

Ingredients

  • 2 sticks unsalted butter
  • 4 apples, approximately 8 ounces each, peeled and grated
  • 1½ cups granulated sugar
  • 2 teaspoons vanilla extract
  • 1⅔ cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 cups rolled oats
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon allspice
  • ¼ teaspoon cardamom
  • ½ teaspoon kosher salt

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, beat together the butter, sugar, vanilla and apples.
  3. Add the flour, baking soda, rolled oats, cinnamon, nutmeg, allspice, cardamom and kosher salt.
  4. Mix until combined.
  5. Drop spoonfuls of dough onto the baking sheet.
  6. Bake for 12–15 minutes, until lightly golden around the edges.
  7. Let cool on the pan for a few minutes before transferring to a wire rack.

If the dough seems too wet, add a little extra flour, up to ½ cup.
