Sunday Gravy


Ingredients:
(makes 6–8 servings)

  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 tsp salt
  • 1 tsp sugar
  • ½ tsp dried oregano
  • handful of fresh basil, torn
  • 1 lb Italian sausage (mild or hot)
  • 1 lb beef or meat of choice
  • 1 small onion, chopped
  • 1 (6 oz) can tomato paste
  • red pepper flakes (optional)
  • splash of red wine or water
  • pasta for serving

Instructions:

  1. In a large pot, sear sausage and beef in olive oil until browned. Remove and set aside.
  2. In the same pot, sauté onion until soft. Add garlic and tomato paste; cook 2–3 min.
  3. Add crushed tomatoes, salt, sugar, oregano, basil, and a splash of red wine or water. Stir well.
  4. Return browned meats to the pot. Simmer uncovered on low for 3–4 hours, stirring occasionally.
  5. Remove meats, shred or serve whole. Toss pasta with the rich sauce and top with your slow-cooked meat.
